Vietnam is in the top ten of sweet potato production in the world. Its annual production is about 1.5 million metric tons and fresh sweet potato is consumed in domestic market and exported to Japan, China, and Korea. Life of many low-income families depends on this crop. About 30 years ago when rice production was not enough, many people in countryside of Vietnam used sweet potatoes as the main food.
Processing sweet potatoes into a dried product improves value of this crop and generates more jobs for the people. This special product can be transported easily to all parts in the country and can be exported easily because it is stable for a long time due to its low moisture content. The output for this crop for farmers would depends less on harvesting season. Consuming this healthy dried sweet potatoes helps the farmers and contributes to sustainable agriculture in Vietnam.
